Champagne doesn’t need spectacle to feel special. As Chef-Owner Houssein Hafian Rodriguez of The Champagnery explains, its pleasure lies in sipping it discreetly, away from fireworks and fanfare.
The champagne speakeasy on Amoy Street, developed by Rodriguez and Two S Creatives—which he co-owns—reflects his belief that “You’re drinking well because you’ve chosen to be there”. Two S Creatives also operates Asador and the speakeasy 61ml behind it, as well as Next Door Spanish Cafe and Mamma Mia Focaccia.

An inviting and relaxed atmosphere is created by this space’s partial wall of top champagne brands, cove lighting, plush banquettes, and low-slung sofas. The open layout also encourages conversation, laughter, and the occasional toast.
With that in mind, its drinks programme strives to be both accessible and adventurous. A balanced portfolio includes renowned champagne houses such as Ruinart, Dom Perignon, Salon, and Billecart-Salmon as well as niche grower-producers like Champagne Petit & Bajan.

Spanish-born Rodriguez recommends the aromatic Salon Le Mesnil Blanc de Blanc 2013, the house’s 44th release in 120 years. Limited to 60,000 bottles, it pairs a smooth, creamy texture with bracing acidity—made for lingering over, and notoriously hard to find.
He also singles out the Philipponnat Royale Réserve Rosé NV. Featuring a creamy texture and an elegant structure, this is well priced for its quality. “It is suitable for drinking at any time of the day. The bubbles are fine, so you don’t fill up too quickly,” Rodriguez adds.
The Champagnery’s cocktails, meanwhile, are categorised by flavour profiles: Bubbly, Crisp, and Bold. The Airmail cocktail, for example, is a beautifully balanced sweet and savoury combination of rum, citrus, honey, and shiso under the Bubbly category.

Looking for something to nibble on? It stands out among Singapore bars by offering freshly baked focaccias from Mamma Mia Focaccia instead of typical bar bites. Try the moreish San Daniele with San Daniele ham, buffalo mozzarella DOP, Genovese pesto, and tomato.
As entertainment is just as important, Music Director Erin Khan revives pre-Covid Singapore nightlife, bringing back DJs like house pioneer Jeremy Boon and female talents such as EJ Missy (Club Kyo), whose sets add a fresh yet grounded vibe.
“A sense of mood, rhythm, and progression was important. Erin’s input helped define The Champagnery as a listening room and a bar,” Rodriguez explains.
For those who love to linger and mingle, The Champagnery is open from 5pm until late Tuesdays to Saturdays, and from 5pm to 4am on the eve of public holidays and public holidays.
