Last night, all eyes were on Seroja, an eight-month-old restaurant which scored a hat-trick with three wins at the Michelin Guide Singapore 2023 award ceremony. Serving cuisine inspired by the Malay Archipelago, the fine dining establishment prides itself with ingredients sourced from South-east Asia.

Aside from clinching a place on the hotly contested one-star list, the restaurant also took home the first-ever Michelin Green Star award, which recognises restaurants that operate at the forefront of sustainability. Meanwhile, Seroja’s very own chef Kevin Wong won the Michelin Guide 2023 Young Chef Award, which acknowledges rising talents in the F&B industry.

The coveted three Michelin stars category is unsurprisingly fronted by the same winners as last year: Les Amis, Odette, and Zen. This category states that the restaurants have exceptional cuisine and are “worth a special journey” just to visit.

This year’s two-star list fell from seven restaurants to six, with Shisen Hanten relegated to one Michelin star. Perennial favourites including Cloudstreet, Thevar. Jaan by Kirk Westaway, Saint Pierre, Shoukouwa, and Waku Ghin retain their two stars.

In the one Michelin star category, five new restaurants made their well-deserved debut. Aside from Seroja, there’s contemporary fine-dining restaurant Born, modern Nordic restaurant Poise, contemporary Asian restaurant Willow, and Japanese omakase spot Sushi Sakura.

As we celebrate the new entrants, the list has also bid farewell to restaurants like the now-defunct Basque Kitchen by Aitor and the well-loved Cantonese restaurant Shang Palace. Meanwhile, Hill Street Tai Hwa Pork Noodles is now the only hawker stall with a Michelin star in Singapore, following Hawker Chan’s exit from the list in 2021.
