You have until 30 June 2026 to catch A Dialogue of Craftsmanship and Time, AP Café Singapore‘s first chef collaboration with Ami Patisserie by Japanese pastry chef Makoto Arami.
Drawing on shared ideas of precision and craft between haute horology and contemporary patisserie, it marks a fresh phase for the café, located within the Bar and Billiard Room at Raffles Hotel Singapore. Opened last year, it was conceived as an extension of the Audemars Piguet universe into hospitality and culinary expression, and is first of its kind in the world where guests can enjoy lunch, tea, or a cheeky pre-dinner tipple.

At the centre of the menu is Takumi Sei, a plated dessert inspired by the Japanese concepts of takumi (craftsmanship) and sei (precision). Built around ingredients like matcha, azuki, and raspberry, the dessert is designed as a structured composition of flavour and texture.
“The Takumi Sei was created exclusively for this collaboration. It’s tasty and has a good balance of sweetness and bitterness. Matcha is a defining element of Japanese culture, and its pairing with azuki is both classic and deeply rooted in tradition. By incorporating raspberry, we introduce a refreshing acidity and a subtle European touch, elevating the flavour profile while maintaining balance and harmony,” says Arami.

The offering is complemented by a Signature Mini Choux Assortment, featuring three distinct creations: a Smoked Caramel Coffee Choux filled with house-blend coffee cream, caramel lava, and hazelnut; a Uji Matcha Kinako Choux combining matcha, kinako, and white chocolate; and a Berries Pistachio Choux finished with vanilla kirsch cream, raspberry, and pistachio.
Guests are also offered a curated beverage programme that includes single-origin coffees, Japanese tea blends, and seasonal infusions developed for AP Café. The pairings are intended to extend the narrative of the menu, linking extraction methods and brewing techniques with the broader theme of time and control.
Set within the historic grounds of Raffles Singapore, the collaboration serves to reflect the positioning of AP Café as a physical expression of the Audemars Piguet brand beyond watchmaking roots in Le Brassus. Through hospitality, it translates the Swiss maison’s values of craft and precision into a different sensory format.
“Both disciplines are grounded by craft and made in precision. In watchmaking, every component must align flawlessly for the mechanism to function. Similarly, pastry demands exacting technique—each step, measurement, and detail must be executed with care. It’s this shared pursuit of perfection that connects the two worlds,” he explains.
For Arami, whose background spans Japanese confectionery heritage dating back to 1935 in Shiga Prefecture as well as experience in acclaimed kitchens including Beige Alain Ducasse Tokyo and Dominique Ansel in New York, the collaboration continues his focus on disciplined, detail-driven pastry work through Ami Patisserie.
