If you’re wondering what celebrated chef Andrew Walsh has been up to since the closure of Cure Singapore, we’ll have you know he’s been cooking up a storm in Bali. Specifically, Regent Bali Canggu, where he oversees Sazón and Cure Bali.

Cure Bali is slated to open some time this year and will provide a take on European dining shaped by Asian flavours. Sazón is already operational and serves Mediterranean-inspired dishes such as grilled flatbreads, citrus-dressed seafood, slow-cooked meats, and fire-roasted vegetables. Also, pastas and paellas, and if I must pick just one standout, it’s the Wet Paella, comprising roast pork, bone marrow, and mushroom sofrito.

The partnership with Walsh was born out of a shared philosophy of craftsmanship, storytelling, and emotional connection through cuisine, says Wiwin Hakim, Director of Marketing & Communications. “His approach goes beyond technique, creating dishes that evoke memory, curiosity and feeling.”

Regent Bali Canggu was launched in 2024 to mark the return of the Regent brand to Indonesia. The property sits along the surfer’s paradise that is Canggu Beach, and houses 150 different villas and suites.

My favourite feature of my capacious one-bedroom suite is the handcrafted teak bathtub. Unlike ceramic, wood is warm to the touch and retains heat well, which invites longer soaks. In addition, a wooden bathtub could pass off as a sculptural piece considering the natural grain patterns and subtle variations in colour.

The sense of groundedness it lends was intentional, Wiwin explains. “Our suites and villas are designed as calming personal sanctuaries that offer space, privacy, and a sense of emotional comfort.”

The property has a number of suite tiers, but if you’re looking to spoil yourself, make it the one-bedroom beachfront pool villa; just don’t expect to leave it much since it comes with a private pool and beach access. It is second only to the two-bedroom oceanfront penthouse with private pool, which has an elongated infinity pool with offering ocean views.

Other on-site dining options include Taru, which serves iconic Indonesian dishes; Beach House with coastal cuisine; and The Lounge with classic light bites.

The return of the Regent brand to Indonesia spells something else as exciting: the debut of the world’s first Regent Spa & Wellness. Its launch was in collaboration with the in-house wellness consultants at InterContinental Hotels Group, which operates Regent Bali Canggu.

The wellness centre not only houses seven treatment rooms, but also facilities such as vitality pools, ice baths, and saunas. Apart from Balinese massages, Regent Spa & Wellness Canggu also offers modernistic experiences through offerings like The Massage Revolution, which involves a therapeutic treatment on a quartz sand bed. The body is apparently better able to relax and fall into a natural healing rhythm when cradled by warm sand.

Other signature experiences feature The Crystal Cure, which includes the application of an oil blend infused with crystals, and The Recovery Remedy, with indulgences such as a moor mud wrap and heated magnesium infusion.

The biggest challenge in running Regent Bali Canggu, Wiwin says, has been in operating a new luxury resort in Canggu’s vibrant and fast-evolving landscape while staying true to Regent’s calm and refined identity. It is why the team is deliberate about details. “We embrace this contrast by thoughtfully shaping everything from spatial flow and soundscaping to service design, ensuring guests experience a true sanctuary within the energy of the destination,” he notes. In his experience, today’s travellers seek both wellness-led and technology-enabled experiences.

This year, Regent Bali Canggu will not only launch Cure Bali, but also introduce Canggu’s first ballroom—a versatile meeting and event venue. Guests can also look forward to new programmes designed to deepen cultural connection and personal wellbeing, Wiwin says. “We’ll continue to refine the thoughtful details that make every stay distinctly Regent.”
