From after-parties to concerts, Singapore is gearing up for Formula 1 Singapore Grand Prix, which happens from 9 to 11 October 2026. And stoking our senses ahead of the flag-off is QT Singapore.
On 8 October, Executive Chef Fabrice Mergalet teams up with chef-restaurateur Bjorn Shen for Playing With Fire, a one-night-only four-hands dinner at Cygnet. Fire is the thread running through the evening, as the duo present a four-course sharing menu that leans into Eastern Mediterranean flavours and open-flame cooking.

It begins with dishes designed to be passed around the table, including wood-fired manoush, alongside labneh with charred cucumber and ikura, and charcoal beef kofta. Then the flames take over, with wood-fired USDA short ribs with baharat jus and harissa-glazed lamb cutlets, followed by grilled oysters given an unexpected treatment with celeriac creamed sago and Egyptian taklia. Dessert leaves guests warm and comforted, with date cake, tahini caramel, vanilla ice cream, and pistachio.
It is a menu that makes sense for Shen (Artichoke and Small’s), whose cooking has long favoured big flavours and an irreverent approach to Middle Eastern and Mediterranean influences.

Two Chefs, Four Courses, One Night
Only two seatings are available for Playing With Fire, either an early dinner from 5.30pm to 7.30pm, or a second seating from 8pm to 10.30pm. The four-course sharing menu also includes an optional wine pairing.
While the Shen-Mergalet collaboration deserves top billing, QT Singapore isn’t putting the brakes on once dinner is over. From 8 to 11 October, Cygnet transforms into a late-night Supper Club, staying open until 2am with post-race indulgences including Kaluga Queen Oscetra caviar-topped nuggets, chipotle lobster roll sliders, and its signature Wagyu burger. Also on the menu: three cocktails inspired by turns on the Marina Bay Street Circuit.

That’s not all. From 9 to 11 October, Shuck Yeah! x Lark brings Tasmania’s Lark Distillery into the mix. Freshly shucked French oysters will go for a dollar each between 5.30pm and 8.30pm, accompanied by whisky cocktails made with Lark’s Devil’s Storm and Fire Trail.
Finally, on 11 October, Cygnet’s Choose Your Indulgence steak-frites experience make a special Sunday appearance across lunch and dinner, with options ranging from the classic to A5 Wagyu, plus oysters and free-flow Champagne, wine, and beer.
