Coconut is probably not the first flavour profile that comes to mind when you think of The Macallan whiskies. But that’s exactly what makes its latest release interesting. The Scottish single malt whisky house has unveiled the sixth and final chapter of its Harmony Collection, a series that explores the relationship between whisky, nature, creativity, and craftsmanship.

The release comprises Inspired by Fresh Coconut and Inspired by Toasted Coconut, two single malts that take the same ingredient in different directions. The first is bright and lively. Bottled at 46.3 percent ABV, it opens with fresh coconut, citrus, and tropical fruit, followed by vanilla, sweet oak, and gentle spice. On the palate, coconut milk and zesty lime bring a soft sweetness, before a floral finish.

Inspired by Toasted Coconut, meanwhile, is richer and more indulgent. Think toasted coconut, crème caramel, and white chocolate on the nose, followed by coconut truffle, charred pineapple, and frangipane on the palate. The finish is long and warming, with sweet oak and tropical fruit.

It is a play in contrasts, with fresh flavours versus toasted, bright notes versus rich. Yet, both are designed around the same idea of balance, with the Whisky Mastery team using a combination of sherry-seasoned American oak and former bourbon casks to bring the coconut character forward. The natural properties of American oak, in particular, help heighten those coconut notes without overpowering the whisky.

For The Macallan, the choice of coconut also extends beyond what is in the bottle. The packaging incorporates discarded coconut fibres, which are transformed through an emission-free process into a richly textured material with a naturally dark hue. It is a fitting detail for a collection that has consistently looked at how natural materials and craftsmanship can come together in unexpected ways.

It makes sense that the collection ends on this note. Harmony, after all, is not necessarily about making everything taste the same. It is about finding a point where contrasting elements work together. Either way, The Macallan has taken an ingredient that feels more at home on a tropical holiday than in a Speyside whisky glass and made it its own.
